Crispy Panko Chicken with Mango Salad

Here’s what you’ll need:

  • 1 Mango
  • 1 large pink apple
  • 1/4 green pepper
  • 1/4 red pepper
  • 1/4 yellow pepper
  • 1 red chilli pepper
  • 1/4 tsp minced garlic
  • 1 tbsp honey
  • 1 tbsp olive oil
  • drizzle white wine vinegar
  • 1 tsp chopped cilantro
  • boneless, skinless chicken breast
  • Panko bread crumbs
  • pinch dried parsley
  • pinch garlic powder
  • 1 egg
  • milk


  1. Add the apple, mango, pepper, chilli pepper, and garlic to a large bowl and mix well.  Add the olive oil, honey and vinegar ensuring everything gets coated evenly.
  2. Mix egg with milk to dip chicken breast in before coating with the panko breadcrumb mixture.
  3. Add pinch of dried parsley and garlic powder to the breadcrumbs and ensure chicken breasts are generaously covered.  Add to pan and cook.
  4. Serve with rice and/or sweet potato

Salad serves 4
