Oatmeal Chocolate Chip Protein Muffins

Here’s What You’ll need:
  • 3 cups rolled oats
  • 1 tbsp baking power
  • 3 tablespoons unsweetened coconut
  • 1.5 scoops Vanilla Whey protein
  • 2 eggs
  • 1 cup skim milk (any milk will do)
  • 3/4 cup vanilla greek yogurt
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup dark chocolate chips
Directions:
  1. Preheat oven to 375′.
  2. Mix all ingredients together by hand and drop into muffin tin. Sprinkle coconut on top of each muffin.  Bake for 20 mins

Makes 12 muffins

each muffin contains approx. 141 cals | 7g fat | 18g carbs | 10g protein

    Is it possible to make an even more super-powered recipe ?

      Sure it is, depending on what you mean by ‘super powered’. If you wanted more protein or calories included, you could either use a weight gainer protein, or simply add more whey to the recipe. You could also use a different type of nut instead of the walnuts that we used. You could try a trail mix for more essential fats and calories as well. Instead of chocolate chips you could substitute fruits too. We have made these with blueberries before and they were delicious. But they don’t last as long with fruits in them so eat them fast or be sure to freeze them.
