Quick and Easy Breakfast Hash

Here’s what you you’ll need:

  • 1 sweet potato diced into small cubes
  • 1/2 of a small yellow onion, chopped finally
  • 1 clove of finely minced garlic
  • handful of brussels sprouts, quartered
  • 2 eggs
  • 3 slices of beautiful bacon
  • salt, pepper and fresh hot pepper to taste
  1. Par-boil your sweet potato cubes until tender but still firm. Drain and remove from heat.
  2. In a cast iron pan, fry your bacon until crispy and set aside. Add onion, garlic and hot pepper to your bacon grease until brown and add quartered brussels sprouts until the outer leaves begin to wilt slightly and change color. Toss in the drained sweet potato, salt and pepper and stir until evenly coated.
  3. Chop 2 slices of bacon into small bite size pieces and add to the mixture, leaving it on the heat for a few moments. Crack two eggs into the mixture, and place in a preheated 400′ oven for roughly 5 minutes before turning on the broil to crisp the edges.
  4. Once plated, top with the remaining piece of crumbled bacon and enjoy!
