Roasted Breakfast Hash Part 2

This is pretty similar to the other hash recipe we posted, but apart from being a breakfast meal, this can be added as a side to any lunch or dinner meal as well.


  • 2 sweet potatoes diced into small cubes
  • 2 hot Italian sausages chopped
  • 1 handful of brussels sprouts, quartered
  • 1 diced green or red pepper
  • 3 slices of bacon crumbled
  • 3 sprigs of rosemary
  • salt and pepper to taste
  1. Add chopped sweet potatoes to a roasting pan, drizzle with olive oil and sprigs of fresh rosemary. Toss then bake for 40 minutes
  2. In a cast iron pan, fry your bacon until crispy and set aside. Add the peppers and brussels sprouts to your bacon grease, and cook until the outer leaves begin to wilt slightly and change color.
  3. Once the potatoes are done, toss with the peppers and brussels sprouts then crumble the bacon on top.
